Hello again, my friends. Today I am not feeling very well. think my allergies are kicking in again, but I wanted to start putting some recipes on here for my foodie friends! I am so lucky to be married to Eric. He loves to cook as much as I do. We love trying out new recipes! Both of our boys like to help out in the kitchen.
Here is a recipe we tried yesterday. It is called CrockPot Taco Soup. It tasted like the Mexican Stew that I make, it just didn't have the Minestrone Soup in it.
I served this with mini mexican cornbread muffins. Do you know how hard it is to find Mexican Cornbread Mix in Hinesville?? Thank goodness I had one package left in my pantry! I need to figure out to make it from scratch. I make my regular cornbread from scratch, so the mexican can't be that hard. It is one of our favorite cornbreads, especially Cooper who doesn't care for spicy things!
I have to say though, Cooper has gotten a little bit better about trying new things! He has no idea how many vegetables I have cut up, pureed and mixed in with his food over the years! Perfect example, we made Tuna Tetrazzinni one night, (my neighbor had given me a spaghetti squash from her garden and we were trying to think of ways to use it!) So when we cut it open, the idea hit me to put it in the food processor then mix it in with the Tetrazzinni (it was the same color)! It was a great meal and Cooper had no idea. We have since used cauliflower in spaghetti, and mashed potatoes. We have used squash, carrots, cauliflower in alot of our meals. So I am getting my boys to eat their veggies!
Okay here is the recipe....for CROCKPOT TACO SOUP
2 cans of Kidney beans
2 cans of Pinto beans
2 cans of corn ( I ended up using half a bag of frozen corn b/c my loving husband didn't pay attention to labels and bought 2 cans of cream style corn instead...lol BUT the lesser amount of corn actually worked great, I don't like a lot of canned corn in my meals. I am strictly a corn on the cob person! So it's your choice)
1 large can of diced tomatoes
1 can of rotel
1 packet of taco seasoning
1 packet of Ranch dressing mix
1 lb browned hamburger meat
shredded cheddar cheese and sour cream for garnish
Brown your meat, drain and then add to the crockpot. Sprinkle both seasoning packets over the meat. Drain and rinse the beans, add to the crockpot. Add ENTIRE contents of corn, tomatoes and rotel. Stir well.
Cover and cook on low for 8 hours or high for 4.
Stir well, garnish with shredded cheese and a dollop of sour cream
Serve with Mexican Cornbread
