My Favorite Dessert Recipes

Alright here we go, going to add several dessert recipes to this post. A lot of these recipes are what I remember eating growing up and still are some of my favorites. This next one is from my Aunt Sandy (Sissy). I used to call her every time I wanted to make it because I would always forget how the recipe went. She finally wrote it down for me! I remember being pregnant with Carson and craving it really bad, but was so sick. Eric called Sissy and got the recipe and surprised me with it!

Cherry Dump Cake

Dump all ingredients into a 13x9 cake pan...do not stir. Put in pan in the order you are reading them. Bake at 350 for 35-45 minutes or until top is golden brown.


2 cans cherry pie filling
1 can crushed pineapples
1/2 box of yellow cake mix
crushed pecans
2 sticks of butter (cut into pats)
1/2 box of yellow cake mix

This next one brings back lots of memories of cooking with my mom. We used to make this alot, but it never lasted very long. I remember making it for the first time for Eric and Cooper. Eric thought I was crazy putting that many flavors of jello into one mixture, thought it would be too sweet! Well I proved him wrong and would catch him eating him eating it right out of the pan! :)


BROKEN GLASS TORTE

1 pkg red Jell-O
1 pkg yellow Jell-O
1 pkg green Jell-O
1 cup pineapple juice
3 Tbsp. sugar
1 pkg unflavored gelatin
1/2 cup cold water
1 1/2 cups graham cracker crumbs
1/2 cup of sugar
1/2 cup butter (melted)
1 pkg of Cool Whip (16oz)
4 8x8 pans



Boil 1 1/2 cups of water for each bowl of Jell-O mix including the unflavored gelatin. Add water to each bowl, stir until completely dissolved. Boil pineapple juice and 3 Tbsp of sugar. Remove from heat and add to the unflavored gelatin. Put each color of Jell-O into separate 8x8 pans and refrigerate until firm.



CRUST
Mix graham cracker crust, sugar and butter together. Press into a 9x13 pan. Save 1/4 cup of graham crackers to sprinkle on top. Remove Jell-O (including pineapple/gelatin mix) from fridge, cut into small squares and combine all into a large mixing bowl. Add Cool Whip and mix well. Pour the mixture onto the crust and spread out evenly. Sprinkle with remaining graham cracker crumbs. Chill for 2 hours!

FRUIT PIZZA
  
(I personally like using strawberries, kiwi, blueberries, grapes, mandarin oranges, maraschino cherries, pineapples. I don't like using bananas because they turn brown too fast. Like I said though it's your choice!)


1 can of marshmallow creme
1 box of cream cheese
Sugar Cookie Mix or a roll of refrigerated sugar cookie dough.
Fruit of your choice


Roll out your cookie dough onto either a pizza pan or a cookie sheet. Cook according to package directions. This will be your "pizza dough"

Mix cream cheese and marshmallow cream with a mixer. Mix well. This will be your "pizza sauce"

Slice fruit.

Spread the cream cheese/marshmallow mixture onto the cookie dough, top with the fruit. You can make a design or just put it on however you want!

Here is another of my all time favorites. I barely wait for these to cool before I am into them!

PEANUT BUTTER CORNFLAKE COOKIES  

1 1/2 cups of sugar
1 1/2 cups light Karo syrup
4 cups of plain cornflakes
1 3/4 cups of creamy peanut butter

Combine sugar and Karo syrup in large pot- stir until the sugar is dissolved. Heat to a FULL ROLLING BOIL. Turn off heat, add Peanut Butter and mix well. (this is where is gets hard to stir) Add Cornflakes and mix completely, making sure all cornflakes are coated.

Drop by spoonfuls onto wax paper and let cool!

These are very addicting! I love them and hope you do too!

The next recipe coming up is one we made just a few days ago. They are called "crack cookies" They are just scratch made chocolate chip cookies with an Oreo baked inside.

"CRACK COOKIES" (chocolate chip/Oreo cookies) 
 
2 sticks of softened butter
3/4 cup of packed light brown sugar
1 cup of sugar
2 large eggs
1 Tbsp. of pure vanilla
3 1/2 cups of all purpose flour
1 tsp of salt
1 tsp of baking soda
10 oz bag of chocolate chips
1 bag of Oreos ( I used the double stuff)






Preheat your oven to 350. Spray your cookies sheets with PAM.
Cream the butter and sugars together until they are well combined, add in eggs and vanilla....mix well.
In a separate bowl combine flour, salt and baking soda. Slowly add these to the wet ingredients bowl, along with the chocolate chips. Mix well.

The next few steps is where I used my own judgement and varied off from the directions. It says to use a cookie scoop or ice cream scoop to get the dough out, but that's way to much. So....I sprayed my hands down with PAM, scooped out some cookie dough flattened it out in my palm, placed the Oreo on top of that, then scooped out more dough. Put that on top of the Oreo and seal the Oreo inside, making sure to closes the edges well. You shouldn't be able to see any Oreo!

These cookies bake up fairly large and I was only able to get 6 to a cookie sheet.

Bake for 13 minutes, let cool 5 minutes before transferring to a cooling rack.

Serve with a tall glass of milk and enjoy!

Crockpot Taco Soup

Hello again, my friends. Today I am not feeling very well. think my allergies are kicking in again, but I wanted to start putting some recipes on here for my foodie friends! I am so lucky to be married to Eric. He loves to cook as much as I do. We love trying out new recipes! Both of our boys like to help out in the kitchen.

Here is a recipe we tried yesterday. It is called CrockPot Taco Soup. It tasted like the Mexican Stew that I make, it just didn't have the Minestrone Soup in it.
I served this with mini mexican cornbread muffins. Do you know how hard it is to find Mexican Cornbread Mix in Hinesville?? Thank goodness I had one package left in my pantry! I need to figure out to make it from scratch. I make my regular cornbread from scratch, so the mexican can't be that hard. It is one of our favorite cornbreads, especially Cooper who doesn't care for spicy things! 

I have to say though, Cooper has gotten a little bit better about trying new things! He has no idea how many vegetables I have cut up, pureed and mixed in with his food over the years! Perfect example, we made Tuna Tetrazzinni one night, (my neighbor had given me a spaghetti squash from her garden and we were trying to think of ways to use it!) So when we cut it open, the idea hit me to put it in the food processor then mix it in with the Tetrazzinni (it was the same color)! It was a great meal and Cooper had no idea. We have since used cauliflower in spaghetti, and mashed potatoes. We have used squash, carrots, cauliflower in alot of our meals. So I am getting my boys to eat their veggies!

Okay here is the recipe....for CROCKPOT TACO SOUP

2 cans of Kidney beans
2 cans of Pinto beans
2 cans of corn ( I ended up using half a bag of frozen corn b/c my loving husband didn't pay attention to labels and bought 2 cans of cream style corn instead...lol BUT the lesser amount of corn actually worked great, I don't like a lot of canned corn in my meals. I am strictly a corn on the cob person! So it's your choice)
1 large can of diced tomatoes
1 can of rotel
1 packet of taco seasoning
1 packet of Ranch dressing mix
1 lb browned hamburger meat
shredded cheddar cheese and sour cream for garnish

Brown your meat, drain and then add to the crockpot. Sprinkle both seasoning packets over the meat. Drain and rinse the beans, add to the crockpot. Add ENTIRE contents of corn, tomatoes and rotel. Stir well.

Cover and cook on low for 8 hours or high for 4.
Stir well, garnish with shredded cheese and a dollop of sour cream

Serve with Mexican Cornbread

I will be writing down my thoughts and ideas, funny things my boys do and say and maybe even some days my frustrations. For all my foodie friends, I will be writing my recipes that I find and make!
